No-Bake Non-Alcoholic Baileys Cheesecake
Ingredients
- Crust
- 1½ cups chocolate cookie crumbs about 20 sandwich cookies, filling removed or kept — your choice
- 5 tablespoons melted butter
- Filling
- 3 8 oz blocks cream cheese, softened
- ¾ cup powdered sugar

- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
Instructions
- Make the Crust
- Mix cookie crumbs and melted butter until it resembles wet sand.
- Press firmly into a 9-inch springform pan.
- Place in the fridge while you make the filling (at least 20 minutes).
- Whip the Cream
- In a separate bowl, beat the heavy whipping cream until stiff peaks form.
- Set aside.
- Make the Filling
- In a large bowl, beat softened cream cheese until completely smooth.
- Add powdered sugar and mix until fluffy.
- Slowly mix in:
- Non-alcoholic Irish cream
- Vanilla
- Beat until creamy and combined.
- Fold & Chill
- Gently fold the whipped cream into the cream cheese mixture.
- Do not overmix — you want to keep that light texture.
- Spread into prepared crust and smooth the top.
- Refrigerate at least 6 hours, preferably overnight.
