No-Bake Non-Alcoholic Baileys Cheesecake

This No-Bake Non-Alcoholic “Baileys” Cheesecake is rich, creamy, and full of classic Irish cream flavor — without any alcohol. Made with chocolate, vanilla, and a hint of coffee, this easy no-bake cheesecake is perfect for holidays, gatherings, or anytime you want a dessert everyone can enjoy. Ingredients

  • Crust
  • cups chocolate cookie crumbs about 20 sandwich cookies, filling removed or kept — your choice
  • 5 tablespoons melted butter
  • Filling
  • 3 8 oz blocks cream cheese, softened
  • ¾ cup powdered sugar
  • ¾ cup non-alcoholic Irish cream see homemade version in this post or use Irish cream coffee creamer
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream

Instructions

  • Make the Crust
  • Mix cookie crumbs and melted butter until it resembles wet sand.
  • Press firmly into a 9-inch springform pan.
  • Place in the fridge while you make the filling (at least 20 minutes).
  • Whip the Cream
  • In a separate bowl, beat the heavy whipping cream until stiff peaks form.
  • Set aside.
  • Make the Filling
  • In a large bowl, beat softened cream cheese until completely smooth.
  • Add powdered sugar and mix until fluffy.
  • Slowly mix in:
  • Non-alcoholic Irish cream
  • Vanilla
  • Beat until creamy and combined.
  • Fold & Chill
  • Gently fold the whipped cream into the cream cheese mixture.
  • Do not overmix — you want to keep that light texture.
  • Spread into prepared crust and smooth the top.
  • Refrigerate at least 6 hours, preferably overnight.

Texture Tips
Make sure cream cheese is fully softened — lumps are hard to fix later.
Chill overnight for clean slices.
For firmer texture, add 1 teaspoon unflavored gelatin bloomed in 1 tablespoon warm water (optional but helpful in warmer kitchens).
