Homemade Hazelnut Extract Starter Jar: A Thoughtful Gift for Bakers
Some homemade gifts are ready to enjoy the moment they’re unwrapped. Others come with a little anticipation—and this hazelnut extract starter jar is one of them.
With roasted hazelnuts, vodka, and a simple glass jar, you can start a homemade baking extract and let your recipient finish the infusion at home. Tie on a ribbon, add clear instructions, and you have a thoughtful gift for someone who loves making cookies, brownies, and other kitchen treats.
The hands-on work is quick. The calendar does the rest. Finally, a gift that understands we have other things to do!
What Is a Hazelnut Extract Starter Jar?
For this gift, a starter jar means the hazelnuts and alcohol are already combined, but the infusion is still developing. Your recipient stores the jar, shakes it occasionally, and strains it when the flavor is ready.
Label it “Hazelnut Extract Starter Jar” so they know it needs finishing before use. Include the date you started it and a date to begin checking the flavor.
Homemade hazelnut extract has a natural roasted-nut character. Its strength varies between batches, and it may be milder than a commercial baking extract.
What You Need
These are the supplies to gather—or link in your shopping list:
- Unsalted roasted hazelnuts
- Plain vodka, at least 80 proof (40% alcohol by volume)
- A clean, dry, 16-ounce glass jar with a tight-fitting lid
- A knife and cutting board
- A fine-mesh strainer and coffee filter for finishing
- A small clean bottle for the finished extract
- A gift tag and ribbon or twine
A wide-mouth jar makes it easier to add the nuts and strain them later. The 16-ounce jar is the infusion container, not the amount of finished extract.

Hazelnut Extract Starter Jar Recipe
Equipment
- 1 16 ounce mason jar
Ingredients
- 1 cup unsalted roasted hazelnuts with as much loose skin removed as practical
- 1 cup plain vodka at least 80 proof, plus a little more if needed to cover the nuts
Instructions
- Prepare the hazelnuts. Use fresh-tasting nuts without a stale or rancid smell. If you roast them yourself, let them cool completely before starting.
- Chop the nuts. Chop them into small pieces to expose more surface area. Avoid processing them into nut butter.
- Fill the jar. Place the chopped hazelnuts in the clean, dry jar.
- Add the vodka. Pour in the vodka, making sure the nuts are covered. Add a little more if necessary. Leave room to shake the mixture.
- Seal and date. Close the lid tightly and write the starting date on the label.
- Let it infuse. Keep the jar in a cool, dark cupboard and shake gently every few days.
- Check and strain. Begin checking the aroma and a small taste after 2–4 weeks. If the hazelnut flavor is too light, allow more time and check weekly. Once you like the flavor, strain out the nuts, then filter the liquid through a coffee filter if desired.
Notes
How to Give It as a Gift
You can give the jar before the infusion is finished. The key is making the next steps easy for the recipient.
Add a tag with the date started, finishing directions, and the words “Contains hazelnuts (tree nuts) and alcohol.” A small strainer or an empty finishing bottle makes a useful addition.
For fall gifting, try amber ribbon, a kraft-paper tag, and a wooden measuring spoon. For the holidays, use deep green ribbon and tuck the jar into a baking basket.

Hazelnut Extract Starter Jar
A little patience. A little shake. Something delicious in the making.Started on: __________

(2–4 weeks after starting)Keep tightly closed in a cool, dark place. Shake gently every few days. When the hazelnut flavor suits you, strain out the nuts and pour into a clean, dry bottle. Use in small amounts for baking.
Contains hazelnuts (tree nuts) and alcohol.
Ways to Use the Finished Extract
Try a small amount in:
- Chocolate brownies or chocolate chip cookies
- Biscotti and shortbread
- Cakes and buttercream frosting
- Pancake or waffle batter
Start with about ¼ teaspoon in a batch, then adjust to suit the recipe and the strength of your extract. Pairing it with vanilla can give baked goods an extra layer of flavor.
This extract is unsweetened, so it won’t replace a hazelnut syrup. It also contains alcohol; adding it to a drink does not remove that alcohol.
Storage Notes
Keep the starter jar tightly closed, away from heat and sunlight. Strain the nuts out when the infusion is finished rather than leaving them in indefinitely.
Label the finished bottle with the ingredients and date. Homemade nut extracts vary, so avoid promising an indefinite shelf life. Discard a batch with mold or an off or rancid smell.
Build a Baker’s Gift Set
Pair the starter jar with a brownie mix, a wooden spoon, a recipe card, and a small finishing bottle. It’s an easy way to turn one homemade jar into a gift with a little more presence.
