Chicken Fried Rice

This Chicken Fried Rice turns yesterday’s leftovers into something that feels brand new. Using the saved chicken and veggies from the stir-fry, a couple of eggs, and leftover rice, it comes together quickly in one pan. It’s cozy, satisfying, and proof that leftovers don’t have to feel like an afterthought.

Ingredients

  • Reserved chicken and veggie mixture
  • 4 cups cooked rice cold rice works best, but no pressure
  • 4 eggs lightly beaten
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon cooking oil
  • 2 green onions optional

Instructions

  • Heat oil in a large skillet over medium heat.
  • Scramble eggs until just set, then push to one side of the pan.
  • Add rice and stir to break it up.
  • Add leftover chicken and veggies.
  • Drizzle in soy sauce and sesame oil. Stir-fry until everything is heated through and lightly crispy.
  • Top with green onions if using and serve hot.

Notes

Flavor boost: Add a splash of leftover stir-fry sauce if things look dry.
