Copycat Chipotle Guacamole

A creamy, chunky, and perfectly balanced guacamole recipe inspired by the Chipotle classic. This version uses simple, fresh ingredients and focuses on the correct ratio of citrus and salt.

Ingredients

  • 2 ripe Hass avocados
  • 2 tsp lime juice freshly squeezed
  • 2 tbsp cilantro chopped (fine)
  • 1/4 cup red onion finely diced
  • 1/2 jalapeño including seeds (finely diced)
  • 1/4 tsp kosher salt or to taste

  • 2 ripe Hass avocados
  • 2 tsp lime juice (freshly squeezed)
  • 2 tbsp cilantro, chopped (fine)
  • 1/4 cup red onion, finely diced
  • 1/2 jalapeño, including seeds (finely diced)
  • 1/4 tsp kosher salt (or to taste)
  • Instructions
  • Prepare the Avocados: In a medium bowl, add the avocado flesh and immediately coat with the lime juice.
  • Mash: Using a potato masher or a large fork, mash the avocados until they reach a smooth consistency with some chunky pieces remaining.
  • Fold in Aromatics: Add the chopped cilantro, red onion, and jalapeño.
  • Season: Sprinkle the salt over the mixture and fold everything together gently.
  • Taste and Adjust: Taste the guacamole. If it needs more "pop," add a pinch more salt or an extra squeeze of lime.
  • Serve: Serve immediately or cover with plastic wrap pressed directly onto the surface to prevent browning.
