Ingredients

  • 1 cup creamy peanut butter
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Mix all ingredients in a bowl until smooth and fully combined.
  • Scoop tablespoon-sized balls onto the baking sheet, about 2 inches apart.
  • Flatten each ball with a fork in a crisscross pattern.
  • Bake for 9–11 minutes, until edges are just set (centers will look soft—this is perfect!).
  • Cool on the pan for 5 minutes, then transfer to a wire rack.
