Italian Dressing Marinated Grilled Chicken Skewers

Ingredients

  • 2 lbs boneless skinless chicken breasts or chicken thighs cut into bite-sized pieces
  • 1 cup Italian dressing
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • Salt and pepper to taste
  • Vegetables Bell peppers, red onion, zucchini, or cherry tomatoes (optional)

Instructions

  • Marinate the Chicken
  • In a large bowl or zip-top bag, combine the Italian dressing, olive oil, garlic powder, onion powder, Italian seasoning, paprika, salt, and pepper.
  • Add chicken and toss to coat well. Cover and refrigerate for at least 1 hour or overnight for even more flavor.
  • Prep the Skewers
  • If using wooden skewers, soak them in water for about 30 minutes.
  • Thread chicken and vegetables onto skewers.
  • Grill
  • Preheat grill to medium-high heat.
  • Grill skewers for 10–15 minutes, turning occasionally, until chicken reaches an internal temperature of 165°F.
  • Serve warm with your favorite summer sides and enjoy those easy summer BBQ nights.

  • Chicken thighs stay extra juicy on the grill.
  • Don’t overcrowd the skewers so everything cooks evenly.
