Marinate the Chicken
In a large bowl or zip-top bag, combine the Italian dressing, olive oil, garlic powder, onion powder, Italian seasoning, paprika, salt, and pepper.
Add chicken and toss to coat well. Cover and refrigerate for at least 1 hour or overnight for even more flavor.
Prep the Skewers
If using wooden skewers, soak them in water for about 30 minutes.
Thread chicken and vegetables onto skewers.
Grill
Preheat grill to medium-high heat.
Grill skewers for 10–15 minutes, turning occasionally, until chicken reaches an internal temperature of 165°F.
