Ingredients

olive oil

skinless chicken breasts

black pepper

Italian seasoning
3
cloves
garlic
minced
½
cup
sun-dried tomatoes
drained and chopped
1
cup
chicken broth
1
cup
heavy cream
½
cup
grated Parmesan cheese
2
cups
fresh spinach
Optional: red pepper flakes
for heat
Instructions
Heat olive oil in a large skillet over medium heat.
Season chicken with salt, pepper, and Italian seasoning.
Add chicken to the skillet and cook 5–6 minutes per side until golden and cooked through. Remove and set aside.
In the same skillet, add garlic and sun-dried tomatoes. Cook for 1 minute until fragrant.
Pour in chicken broth, scraping up browned bits from the pan.
Stir in heavy cream and Parmesan cheese. Simmer 3–4 minutes until slightly thickened.
Add spinach and stir until wilted.
Return chicken to the skillet and simmer 3–5 minutes until heated through.
Serve warm over pasta, rice, or mashed potatoes.
Notes
Swap heavy cream for half-and-half for a lighter version.
Add mushrooms for extra flavor.
Leftovers keep well in the fridge for up to 3 days.
