One-Pot Creamy Tuscan Chicken

Ingredients

  • 1 tablespoon olive oil
  • 4 boneless skinless chicken breasts
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 3 cloves garlic minced
  • ½ cup sun-dried tomatoes drained and chopped
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 cups fresh spinach
  • Optional: red pepper flakes for heat

Instructions

  • Heat olive oil in a large skillet over medium heat.
  • Season chicken with salt, pepper, and Italian seasoning.
  • Add chicken to the skillet and cook 5–6 minutes per side until golden and cooked through. Remove and set aside.
  • In the same skillet, add garlic and sun-dried tomatoes. Cook for 1 minute until fragrant.
  • Pour in chicken broth, scraping up browned bits from the pan.
  • Stir in heavy cream and Parmesan cheese. Simmer 3–4 minutes until slightly thickened.
  • Add spinach and stir until wilted.
  • Return chicken to the skillet and simmer 3–5 minutes until heated through.
  • Serve warm over pasta, rice, or mashed potatoes.

Notes

Swap heavy cream for half-and-half for a lighter version.
Add mushrooms for extra flavor.
Leftovers keep well in the fridge for up to 3 days.
