Surprise Meringues (with Chocolate Chips and Rice Krispies)

These light, crispy meringue cookies have been a favorite of mine since childhood. They are light and fluffy filled with gooey chocolate and Rice Krispies.
Cook Time 25 minutes

Ingredients

  • 2 egg whites
  • teaspoon cream of tartar
  • teaspoon salt
  • 1 teaspoon vanilla extract
  • ¾ cup sugar
  • 1 cup chocolate chips semi-sweet or milk chocolate
  • ¼ cups Rice Krispies cereal

Instructions

  • Preheat your oven to 300°F (150°C). Line a cookie sheet with parchment paper (plain paper works too).
  • In a clean bowl, beat the egg whites with the salt, cream of tartar, and vanilla until soft peaks form.
  • Gradually add the sugar, beating continuously until stiff peaks form and the mixture is glossy.
  • Gently fold in the chocolate chips and Rice Krispies cereal.
  • Drop the mixture by rounded teaspoonfuls onto the prepared cookie sheet.
  • Place in the preheated oven and bake for about 25 minutes, until lightly golden and set.
  • Turn off the oven and let the cookies cool inside with the door closed (optional for extra crispiness).

Notes

These are fragile, so handle with care!
• Yield: About 3-4 dozen cookies, depending on size.
• Store in an airtight container.
